Just wanted to share this recipe: Cornbread Chili Casserole
If you love corn dogs and chili....try this. 4 out of 6 loved it here! I just threw it together one night when I was craving a corn dog. So this is just a rough draft recipe I am sharing. This is much better for you then a deep fried one. There might be a recipe similar to this out there...but I have never seen one. If so sorry!
You could use your favorites of each item..and more or less of each too,depending on likes of you and your family and how many you are feeding.
Hot dogs, sliced (I used 5)
Chili (with or without beans, I tried without, 3- 15 oz cans)
shredded cheese (I used a cup sharp cheddar)
doubled corn bread batter ( I used Jeanie Wilson's in the ward cookbook) Thanks Jeanie!
I took a 9x13 pan, spread chili to cover the bottom. Layer hot dog slices on top of chili. Sprinkle with cheese. Pour and spread corn bread batter over to cover chili and cheese. Cook at 425 degrees for 30 to 40 minutes. Making sure corn bread is cooked through.
There could have been more batter.....and too much chili. Next time I will use less chili and it will be covered better. But it was sure tasty!
